Spanish Rice - cooking recipe
Ingredients

6 slices bacon
1/4 c. finely chopped onion
1/4 c. chopped green pepper
2 c. canned tomatoes
3 c. cooked rice
1 tsp. salt
1/8 tsp. pepper
Preparation

Fry bacon until crisp. Remove. Add onion and green pepper. Cook slowly until onion is soft and yellow.
Crumble bacon.
When onion and pepper are tender, add all other ingredients in a greased casserole dish and stir. Bake in a 350\u00b0 oven for 30 minutes.
Sprinkle top with grated cheese just before done, if desired.
