Mashed Potato Casserole - cooking recipe
Ingredients

8 to 10 boiling potatoes
1 (8 oz.) pkg. cream cheese, softened
2 eggs, beaten lightly
2 Tbsp. minced fresh parsley
1 small onion, grated
1 (3 1/2 oz.) can French-fried onions
salt and pepper to taste
2 Tbsp. flour
Preparation

Peel and boil potatoes until tender; drain and put in large bowl of electric mixer.
Beat until smooth.
Add salt and pepper, then cream cheese and beat again.
Blend in eggs, flour, parsley and grated onion; beat thoroughly.
Check seasonings and turn into buttered casserole.
Spread slightly crushed onions over top and bake uncovered at 325\u00b0 for 30 to 45 minutes, until puffy and golden.
Casserole may be prepared in the morning and refrigerated until baking time, the onions added just before placing in oven. Serves 8.
