Watermelon Pickles - cooking recipe

Ingredients
    rind of 20 lb. watermelon
    2 Tbsp. salt
    2 c. vinegar
    7 c. sugar
    1 Tbsp. whole cloves
    3 sticks cinnamon
Preparation
    Choose a black diamond melon with thick skin. Trim outer green skin and pink flesh. Cut into cubes. (Remove all red meat.) Soak overnight in brine. Rinse and let stand in ice water 4 hours. Drain; cover with boiling water and simmer until tender (about 10 minutes).
