Salad Surprise - cooking recipe

Ingredients
    2 c. sauerkraut, well drained
    2 c. shredded carrots
    1 c. diced green pepper
    1/4 c. chopped pimento
    1 tsp. salt
    1/3 c. white vinegar
    2 c. diced celery
    1/2 c. diced onion
    3/4 c. sugar
    dash of pepper
Preparation
    Early in the day, or up to one week before serving, combine vegetables in medium bowl; mix sugar, vinegar, pepper and salt; mix with the vegetables.
    Cover and refrigerate at least 4 hours. Serve on lettuce leaves or cup.
    Decorate as desired; can also be served as a relish.
