Golden Easter Bread - cooking recipe

Ingredients
    1 pkg. dry yeast
    1/4 c. sugar
    2 tsp. salt
    1 tsp. grated lemon rind
    4 or 5 c. all-purpose flour, divided
    3/4 c. warm water
    1/4 c. vegetable oil
    3 eggs, slightly beaten
    1/3 c. raisins
    butter or margarine, melted
Preparation
    Dissolve yeast in warm water in a large mixing bowl; let stand 5 minutes.
    Stir sugar, oil and salt into yeast mixture.
    Add eggs, lemon rind and 2 cups flour; beat at low speed with an electric mixer until mixture is smooth.
    Stir in enough remaining flour to make a soft dough.
    Turn dough out onto a floured surface.
    Add raisins; knead until smooth and elastic (about 8 to 10 minutes).
    Place in a well-greased bowl, turning to grease top. Cover; let rise in warm place (85\u00b0) free from drafts, 1 hour or until doubled in bulk.
