Anne'S Eggplant And Pasta - cooking recipe

Ingredients
    1 medium eggplant
    1 1/2 tsp. chopped garlic
    3 Tbsp. olive oil
    2 Tbsp. parsley
    2 (14 oz.) cans Contadina pasta ready tomatoes
    1/8 tsp. hot peppers
    1/2 tsp. basil
    1 lb. spaghetti
Preparation
    Peel eggplant,
    slice
    into
    pieces and salt.
    Place in colander to
    drain for 30 minutes.
    Saute garlic in olive oil. Do not
    brown
    garlic.
    Add parsley, tomatoes, hot peppers and basil. Cook uncovered 25 minutes.
