Roast Leg Of Lamb - cooking recipe

Ingredients
    5 lb. leg of lamb
    1 lemon
    1/2 stick butter
    1 c. water
    2 cloves garlic, minced
    1 tsp. salt
    1/2 tsp. pepper
    small potatoes
Preparation
    Wash meat and set aside in roasting pan.
    In a small bowl, mix salt, pepper and minced garlic,
    Cut incisions into leg of lamb with a sharp knife.
    Into incisions, place seasoning mixture and a little butter.
    Spread soft butter over leg, rubbing in rest of seasonings.
    Pour juice of lemon over meat in pan.
    Cook, covered, at 350\u00b0 for 1 hour.
    Add water to pan drippings and baste often until brown and tender.
    Add small potatoes and continue to baste. Uncover last 1/2 hour to crisp skin of roast.
