Green And Gold Squash Medley - cooking recipe

Ingredients
    1 1/2 lb. small yellow squash and/or zucchini, cut lengthwise into 1/4-inch slices
    1 lemon, zested and juiced
    3 Tbsp. extra virgin olive oil
    1 1/2 Tbsp. sliced mint leaves
    1/3 c. olives, pitted and coarsely chopped
Preparation
    Heat broiler or grill.
    Cook squash and zucchini slices 6 to 8 minutes or until tender, turning once.
    In small bowl, whisk together 1 tablespoon each lemon zest and juice, olive oil and mint.
    Pour sauce over squash and zucchini.
    Sprinkle with olives. Add salt and pepper to taste and garnish with lemon wedges, if desired.
    Serve warm or cold.
    Makes 6 servings.
