Ingredients

2 c. cooked cubed beets
1/3 c. sugar
2 tsp. cornstarch
pinch of salt
1/3 c. vinegar
1/4 c. orange juice
1 1/2 Tbsp. butter or margarine
Preparation

Drain beets.
Combine sugar, cornstarch and salt in saucepan. Add and stir in vinegar and orange juice.
Place over medium heat and cook, stirring constantly, until the mixture comes to a boil and thickens and becomes clear.
Stir in beets and butter; heat thoroughly.
Yields 4 servings.
