Ginger Jellies - cooking recipe

Ingredients
    1 (23 oz.) jar unsweetened applesauce
    1 1/2 to 2 Tbsp. freshly grated ginger (omit fiber)
    1 1/4 c. sugar
    1/8 tsp. salt
    2 Tbsp. lemon juice
    3 packets unflavored gelatin
    4 to 8 drops yellow or red coloring
    1/3 c. sugar for coating
Preparation
    Spray nonstick 8-inch square pan.
    Reserve 1/2 cup applesauce. Combine remaining sauce, ginger, sugar and salt in pot.
    Bring to boil and cook 25 minutes. Stir in lemon juice, gelatin and reserved applesauce.
    Add coloring.
    Cook 10 minutes.
    Pour into prepared pan.
    Smooth top and cool completely.
    Cut into 64 squares.
    Coat with 1/3 cup sugar.
    Layer jellies between plastic wrap in airtight container and store in refrigerator.
