Ingredients

1 lb. ground smoked ham
1 large carrot, grated
1 small onion, minced
1 c. fresh bread crumbs
2 eggs
2 Tbsp. chopped parsley
2 tsp. prepared mustard
1 (8 oz.) can pineapple slices in juice
2 Tbsp. brown sugar
2 Tbsp. cornstarch
1 Tbsp. butter or margarine
1 Tbsp. lemon juice
Preparation

In medium bowl with fork, mix first 7 ingredients.
Shape mixture into 7 x 3-inch loaf in ovenproof pan.
Bake at 350\u00b0 for 30 minutes.
Drain pineapple juice into 1-quart pan.
Stir into juice brown sugar and cornstarch.
Heat over medium heat, while stirring, until thickened and bubbly.
Remove from heat; stir in lemon juice and butter.
