A. J. Bumps Carrot Casserole - cooking recipe

Ingredients
    3 c. raw carrots
    15 soda crackers, crushed
    2 Tbsp. minced onion
    2 Tbsp. butter
    salt and pepper
    1/2 c. shredded Cheddar cheese
    2/3 c. liquid from carrots
Preparation
    Boil onion and carrots.
    When carrots are soft, drain; save the carrot water.
    Mash carrots.
    Add butter, salt, pepper, soda crackers (crushed in your hand) and at least 2/3 cup of the carrot water.
    Stir.
    Put in baking dish.
    Add cheese on top.
    Bake at 350\u00b0 for 15 minutes.
    Serves 4.
