King Arthur Flour Pancake "Mix" - cooking recipe

6 c. King Arthur unbleached all-purpose flour
3 c. King Arthur whole wheat flour
1/2 c. wheat germ or bran (optional)
1 1/2 c. nonfat dry milk or 1 1/2 c. dry buttermilk powder
1 Tbsp. salt
1/4 to 1/2 c. sugar (white or brown)
1/4 c. baking powder
1 c. vegetable shortening
Preparation

In a large bowl, combine the flours, wheat germ or bran, dry milk, salt, sugar and baking powder and mix well.
Cut in the shortening until it is evenly distributed.
(It is important to use shortening rather than butter, because it remains stable at room temperature.)
