Texas Quiche - cooking recipe

Ingredients
    2 (4 oz.) cans whole green chillies
    1 lb. Monterey Jack cheese or sharp Cheddar cheese, shredded
    6 to 7 eggs, beaten
    salt to taste
Preparation
    Cut and remove the seeds from the chillies. Line baking dish with chillies; sprinkle cheese on top.
    Pour beaten eggs and salt over cheese.
    Bake 25 minutes or until set.
    Let cool for 30 minutes; cut into small squares.
    This is good served warm or cold and freezes well.
