Carrot Cake - cooking recipe
Ingredients

2 c. shredded raw carrots
1 c. raisins
1 1/2 c. sugar
1 1/2 c. water
1/3 c. butter
1 c. all-purpose flour
1 1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. ground clove
1/2 tsp. ground allspice
1 tsp. ground nutmeg
1 tsp. ground cinnamon
1 c. whole wheat flour
1 tsp. vanilla
1 c. chopped walnuts
Preparation

Place lightly packed shredded carrots, raisins, sugar, water and butter in a 3-quart saucepan and bring to a simmer over medium heat.
Continue to simmer for 5 minutes, uncovered.
Remove from heat and let cool.
