Ingredients

2 c. mixed dried beans (white, pinto, split peas, etc.)
2 qt. water
1 ham hock
1 1/4 tsp. salt
1/4 tsp. pepper
16 oz. can whole tomatoes (undrained), coarsely chopped
1 large onion, chopped
l clove garlic, minced
1 chili pepper, coarsely chopped
1/4 c. lemon juice
Preparation

Soak overnight or parboil beans.
Drain off old water; add 2 quarts of water and the next 3 ingredients.
Cover and bring to a boil.
Simmer until beans are tender.
Add remaining ingredients and simmer 30 minutes.
