Trish'S Irish Potatoes - cooking recipe

Ingredients
    3 lb. red potatoes
    2 1/2 lb. sweet potatoes or yams
    1 1/2 lb. onions, quartered
    6 Tbsp. olive oil
    salt, pepper and parsley to taste
Preparation
    Scrub potatoes and cut into 1-inch wedges.
    Combine ingredients and spread evenly, 1 layer thin, in a large roasting pan.
    Bake at 450\u00b0 for about 55 minutes, until brown.
    Serve with Sherry Butter.
