Borscht(Russian Soup) - cooking recipe
Ingredients

5 peeled beets
1 1/2 qt. water
1 onion, chopped
1 c. tomato puree
1 Tbsp. lemon juice
1 tsp. sugar
1/2 tsp. dill weed
salt and pepper
sour cream (optional)
Preparation

Grate beets and combine with onion and water in a heavy kettle. Bring to a boil.
Cover and simmer about 45 minutes.
Add tomato puree, lemon juice, dill, salt and pepper.
Cook 45 minutes more. Heat but do not boil.
Serve hot or cold topped with sour cream (optional, omit for low cholesterol).
Serves 4 to 6. Low cholesterol.
