Mexican Cornbread - cooking recipe
Ingredients

1 1/2 c. self-rising cornmeal
1 c. buttermilk
3 eggs, beaten
1/2 c. cooking oil
1 tsp. grated onion
1 c. cream-style corn
1/2 large sweet pepper, grated
2 tsp. grated hot pepper (optional)
1 c. grated sharp Cheddar cheese
Preparation

Mix all ingredients together except cheese.
Pour half of the batter in greased skillet; sprinkle cheese over the batter.
Pour rest of batter over cheese.
Cook at 375\u00b0 for 1 hour or until golden brown.
Yields 10 to 12 servings.
