Chicken Enchiladas - cooking recipe

Ingredients
    1 chicken or Schwans diced frozen chicken*
    1 small onion
    butter
    1 (10 oz.) can cream of chicken soup
    1 (10 oz.) can cream of mushroom soup
    1 (4 oz.) can chopped green chilies
    corn tortillas
    1 lb. Longhorn cheese, shredded
Preparation
    Wash chicken or thaw diced chicken.
    Cook fresh chicken in water to cover in saucepan until tender.
    Drain, reserving 1 1/2 cups broth.
    (If you use frozen diced chicken, use 1 1/2 cups canned broth.)
    Chop chicken in bite size pieces.
    Saute onion in a small amount of butter in large skillet.
    Add soups, green chilies and broth; mix well.
    Stir in chicken.
    Layer tortillas, chicken mixture and cheese 1/2 at a time in a 9 x 13-inch baking dish.
    Bake at 350\u00b0 for 30 minutes.
    Garnish with salsa and sour cream.
