Apricot Sponge Roll - cooking recipe

Ingredients
    1 c. sifted flour
    1 tsp. baking powder
    1/8 tsp. salt
    3 large eggs
    1 c. sugar
    1 tsp. vanilla
    1/3 c. water
    3/4 tsp. instant coffee
    5 tsp. hot water
    1/4 c. margarine, softened
    2 c. sifted confectioners sugar
    1/4 tsp. vanilla
    1/3 c. apricot preserves
    1/4 c. chopped nuts (optional)
Preparation
    Preheat oven to 350\u00b0.
    Grease 15 1/2 x 10 1/2 x 1-inch jelly roll pan.
    Line with wax paper and grease again.
    Sift together first 3 ingredients; set aside.
    In small bowl, beat eggs, sugar and vanilla on high speed until thick, about 5 minutes.
    At low speed, blend in water, then dry ingredients all at once.
    Pour batter in pan.
    Bake 14 minutes or until top springs back when touched.
    Turn out cake on confectioners sugar dusted towel.
    Roll up in towel.
    Cool.
