Pork Loin(Yield: 12 Servings) - cooking recipe

Ingredients
    1/4 c. olive oil
    2 Tbsp. ground coriander
    2 Tbsp. coarse salt
    1 Tbsp. black pepper
    2 tsp. crushed red pepper
    1 tsp. ground cumin
    1 (8 lb.) Bone-in Pork Loin Roast
Preparation
    Preheat oven to 350\u00b0. Mix first 6 ingredients in small bowl to blend. Place pork on rack in large roasting pan. Rub spice mixture all over. Roast until meat thermometer inserted into center registers 150\u00b0, about 2 hours 30 minutes. Transfer roast to platter. Tent with foil; let stand 10 minutes. Carve roast. Good to serve with Cranberry and Coriander Chutney Sauce.
