Eggplant Casserole - cooking recipe

Ingredients
    1 medium eggplant
    4 slices toasted bread cubes
    1 lb. sausage, cooked and drained
    1 c. onion, finely chopped
    1 can stewed tomatoes, drained
    1/2 c. diced bell pepper
    1 tsp. minced garlic
    1 c. sharp shredded cheese
Preparation
    Peel and cube eggplant.
    Cook in water until tender.
    Drain. Mix in rest of ingredients.
    Bake in greased casserole dish until cheese melts in a 350\u00b0 oven.
