Dirty Rice - cooking recipe

Ingredients
    1 lb. each chicken livers and gizzards
    4 chicken backs
    2 large red onions, chopped
    2 c. chopped celery
    1 bunch green onions, chopped
    1/4 bunch parsley, chopped
    3 c. long grain rice
    salt and pepper to taste
Preparation
    Chop the livers and gizzards.
    In a large saucepan (5-quart), combine livers, gizzards and chicken backs.
    Cover with water. Bring to a rolling boil. Reduce heat and simmer until meat comes off bones.
    Remove bones.
    Add remaining ingredients, except rice. Bring to a boil and add rice.
    Cook until rice is done.
