Cock-A-Leekie Soup - cooking recipe

Ingredients
    3 Tbsp. butter
    4 large leeks (white part only), sliced
    3 potatoes, diced
    1 large onion, minced
    3 c. chicken stock
    2 c. milk
    1 c. heavy cream
    salt and white pepper
    chopped chives
Preparation
    In a large heavy saucepan, melt butter and saute leeks, potatoes and onion, stirring often, until onion is tender.
    Cover and simmer for 15 minutes.
    Stir in stock and milk; cover and cook 5 minutes.
    Cool slightly; remove and puree vegetables.
    Return vegetables to soup; add cream and season with salt and pepper. Warm and serve garnished with chives.
