Raisin Carrot Muffins - cooking recipe
Ingredients

2 c. flour
1 c. sugar
2 tsp. baking powder
1/4 tsp. ginger
1/2 tsp. cinnamon
1/2 c. shredded carrots
1/2 c. raisins
1/2 c. walnuts
1 (8 oz.) can crushed pineapple
2 eggs
1/2 c. melted margarine
1 tsp. vanilla
Preparation

Combine flour, sugar, baking powder, cinnamon and ginger. Stir in carrots, raisins and nuts.
Separately combine, pineapple, eggs, butter and vanilla.
Add this to dry ingredients.
Do not overmix.
Use greased or paper-lined cups.
Bake at 375\u00b0 for 20 to 25 minutes.
