Jambalaya - cooking recipe
Ingredients

3 lb. chicken, cut up
3 Tbsp. flour for dredging
4 Tbsp. lard
2 c. sweet red pepper
1 green onion
2 garlic cloves
1/2 lb. ham
3 c. onion
1 1/2 lb. pork
6 hot sausages
3 tsp. salt
1 tsp. pepper
1/2 tsp. red pepper
4 bay leaves
1/2 lb. shrimp
2 c. chicken broth
2 c. water
Preparation

Brown floured chicken in lard (3 tablespoons).
Remove from stove.
Saute onions, red pepper, green onion, garlic, ham and pork until tender in a large pot with 1 tablespoon lard.
Add broth and water.
Cook over medium heat for 20 minutes.
Add sausages.
Stir in salt, pepper, red pepper and bay leaves.
Cook for four minutes.
Stir in shrimp and cover.
Cook for 10 more minutes.
