Crawfish Au Gratin - cooking recipe

Ingredients
    1 stick margarine
    1/2 c. chopped onion
    1 pkg. crawfish
    1 tsp. salt
    1/2 tsp. pepper
    1/2 lb. cheddar cheese
    1 c. milk
    2 egg yolks, beaten
    1 tsp. cornstarch
    1 Tbsp. water
    1/2 c. Velveeta (optional)
Preparation
    Combine margarine and onions over low heat, saute for 5 minutes. Add crawfish, salt and pepper; simmer 10 minutes. In double boiler, combine cheese, milk and egg yolks. Mix cornstarch with water. Add to cheese mixture and let boil for 5 minutes. Pour crawfish mixture into cheese mixture and blend well. Pour into casserole dish. Bake at 350\u00b0 for 10 minutes.
