Carrot Salad - cooking recipe
Ingredients

4 c. grated, fresh carrots
1 tsp. salt
1 c. raisins
2 Tbsp. sugar
2 c. diced celery
3/4 c. mayonnaise
Preparation

Mix carrots, sugar and salt; let stand 1 hour.
Place in large strainer or colander.
Add celery and raisins.
Mix and let stand for 30 minutes.
Stir in mayo and mix well.
Let stand over sink for 15 to 20 minutes so extra mayo can drain.
Serve in scoops on bed of lettuce.
Refrigerate to store.
Serves 6 to 8.
