Lentil Chili - cooking recipe
Ingredients

1/3 c. olive oil
1 medium chopped onion
2 minced garlic cloves
1 peeled, chopped carrot
7 c. water
1/3 c. tomato paste
2 c. brown lentils, rinsed
1 green chopped pepper
1 sweet red chopped pepper
1 (19 oz.) can red kidney beans
1 c. garbanzo beans
2 c. canned tomatoes
1/3 c. chili powder
4 tsp. cumin
1/4 tsp. red pepper flakes
Preparation

Heat olive oil in a large heavy pot.
Saute onion, garlic and carrot until tender (5 minutes). Add water, tomato paste, lentils, peppers and beans. Break tomatoes on the side of the pan. Add to mixture. Stir in chili powder, cumin and pepper flakes. Bring to a boil. Reduce heat to medium to low and cook about 45 minutes or until lentils are tender, but not mushy.
Add salt and pepper to taste.
Serve on rice.
