Baked Eggplant - cooking recipe

Ingredients
    1 lb. ground chuck
    2 medium eggplant (about 1 1/2 lb. each)
    1/2 c. chopped onion
    2 large tomatoes, chopped
    1 clove garlic, minced
    1/4 c. Parmesan cheese, grated
Preparation
    Dice eggplant and boil in salted water for about 5 minutes. Drain and set aside.
    Saute ground beef, onion and garlic in skillet for about 10 to 15 minutes.
    Drain excess grease.
