Eggplant Casserole - cooking recipe

Ingredients
    6 Tbsp. butter
    2 c. cooked eggplant, cubed
    1 Tbsp. onion, chopped
    1 tsp. salt
    1/4 tsp. black pepper
    1 c. milk
    1/4 tsp. sage
    1 c. cracker crumbs
    1 c. American cheese, cubed
    2 eggs, beaten
Preparation
    Add butter to hot eggplant; mix until melted.
    Add remaining ingredients; mix well.
    Pour into greased casserole dish.
    Bake at 325\u00b0 until center rises, about 30 minutes.
    Makes 6 to 8 servings.
