Ponderosa Relish - cooking recipe

Ingredients
    3 lb. ripe tomatoes (9 big tomatoes or 12 medium)
    1 green (bell) pepper
    1 small red pepper (optional)
    3 white onions
    3 or 4 pieces celery (no leaves)
    1 stick cinnamon or 1 tsp. powdered cinnamon
    1 c. sugar
    2 c. vinegar
    2 tsp. salt
    1 tsp. dry mustard
    4 cloves
Preparation
    Chop the first 5 ingredients. Add remaining ingredients in a pot large enough to allow slow boiling and cook for approximately 2 hours. Stir often to prevent scorching. Cook until relish reaches sauce-like thickness. Pour into sterilized jars and seal immediately. Makes approximately 4 pints.
