Eggplant Mozzarella - cooking recipe

Ingredients
    1 eggplant, peeled and thinly sliced
    2 eggs
    1/2 c. milk
    Italian seasoned bread crumbs
    cooking oil
    shredded Mozzarella cheese
    1 jar Ragu spaghetti sauce
Preparation
    Beat eggs and milk together with fork until smooth.
    Heat 1/4 inch oil in frying pan over low heat.
    Dip eggplant into egg and milk mixture and roll in bread crumbs.
    Dip eggplant again into egg and milk and re-roll in bread crumbs.
    Let dry on wire racks several minutes, then fry in tho oil until golden brown.
    Drain on paper towels.
