Ingredients

2 c. whole wheat pancake mix
3/4 c. walnuts, chopped
1 scoop whey protein (optional)
3 Tbsp. ground cinnamon
2 c. skim milk or soy milk
1 c. egg whites
1/2 c. applesauce
nonstick cooking spray
Preparation

In a large bowl, combine pancake mix, walnuts, whey protein and cinnamon.
Blend milk, egg whites and applesauce in a blender. Add the wet mix to the dry, mixing thoroughly.
Set waffle iron to low for soft waffles or medium to high for the crisper variety. Coat waffle griddle with nonstick cooking spray.
Pour a quarter of the mixture into the waffle iron.
The waffle iron will automatically tell you when it's done.
Makes 4 large waffles.
