Southwestern Chicken Cordon Bleu - cooking recipe
Ingredients

boneless and skinless chicken breasts, both sides attached
slices of Monterey Jack cheese
slices of ham, as lean as possible
pieces of mild green chilies (canned is okay, fresh roasted is best)
mustard
Preparation

Pound double breasts slightly.
Spread lightly with mustard. In center place piece of Monterey Jack cheese, piece of ham, piece of green chili.
Roll each breast and secure with toothpick.
In oiled pan, place breasts.
Sprinkle with paprika for color and drizzle with olive oil.
Bake at 400\u00b0 for 15 minutes.
Then reduce heat to 375\u00b0 for 15 to 20 minutes or until done.
