Sara Salade - cooking recipe

Ingredients
    1 head Boston lettuce
    1 head escarole
    4 heads endive
    1 1/2 c. peas, cooked
    1 medium red onion, sliced
    1 c. Julienne Swiss cheese, grated
    6 slices bacon, cooked
    3 tsp. sugar
    salt and pepper
    6 Tbsp. Hellmann's mayonnaise mixed with a little olive oil
Preparation
    Wash and dry greens.
    Place 1/3 of mixed greens in a bowl. Dot with 2 tablespoons mayonnaise and 1/3 of onion slices. Sprinkle with 1 teaspoon sugar, a dash of salt and pepper, 1/3 of peas and 1/3 of cheese.
    Repeat 3 times.
    Do not toss.
    Cover and chill at least two hours.
    Crumble the bacon.
    Just before serving, top with bacon and toss.
    Yields 8 servings. Preparation:
    15 minutes.
    Chilling:
    2 hours.
