Tart And Tangy Baked Beans - cooking recipe

Ingredients
    3 c. dry pinto beans, soaked
    4 c. chopped onions
    2 Tbsp. olive oil
    1 1/2 to 2 tsp. salt
    1 Tbsp. chili powder
    2 tsp. cumin
    1 1/2 tsp. dry mustard
    8 cloves garlic, minced
    6 Tbsp. dry white wine
    8 Tbsp. cider vinegar
    3 Tbsp. molasses
    2 c. grated cheese
    3 medium tart apples, chunked
    4 medium ripe tomatoes, chunked
Preparation
    Soak beans for at least 4 hours.
    Place soaked beans in a kettle and cover with water.
    Bring to a boil and simmer, partially covered, until tender about 1 1/2 hours.
    Drain water. Saute onions in olive oil.
    Add salt, chili powder, cumin and mustard and cook 10 minutes.
    Add garlic and saute 5 minutes longer.
    Add mixture to beans along with remaining ingredients, mixing well.
    Heat oven to 350\u00b0.
    Transfer beans to a deep casserole or a 9 x 13-inch baking pan.
    Cover tightly with foil and bake 1 hour.
