Baked Ziti - cooking recipe

Ingredients
    4 Tbsp. olive oil
    1/4 lb. sweet Italian sausage links, casing removed and meat crumbled
    1 medium yellow onion, chopped
    2 cloves garlic, minced
    1 (28 oz.) can Italian plum tomatoes, drained and chopped
    1 tsp. salt
    1/2 to 3/4 tsp. crushed red pepper flakes
    6 Tbsp. minced fresh Italian parsley leaves
    1 lb. uncooked ziti pasta
    2 c. part-skim Ricotta cheese
    1 c. grated fresh park-skim Mozzarella cheese
    1/2 c. freshly grated Parmesan cheese
Preparation
    Grease shallow 3-quart baking dish; set aside.
    In heavy, medium skillet, heat 3 tablespoons oil over medium heat.
    Add sausage, onion and garlic, saute 5 minutes or until onion is softened, breaking up sausage with wooden spoon.
    Add tomatoes, salt, pepper flakes and 4 tablespoons parsley; heat to boiling. Reduce heat and simmer gently 20 minutes.
