Candied Citrus Peel - cooking recipe
Ingredients

1 thick-skinned grapefruit
2 thick-skinned oranges
1 thick-skinned lemon
1 1/2 c. sugar
additional sugar
Preparation

Peel fruits.
Cut peel into 2 x 1/4-inch strips.
Cover with cold water in a saucepan and let come to a boil.
Drain and repeat 3 times.
Drain; add 1 1/2 cups sugar.
Cook over low heat, stirring until sugar dissolves.
Continue to cook until peel becomes transparent and has absorbed all the syrup.
Roll each piece in additional sugar.
Store in covered containers.
Yield: 1 to 1 1/2 cups.
