Chicken Enchiladas - cooking recipe
Ingredients

2 c. chicken
1 can green chilies
1 c. onion, chopped
3/4 to 1 lb. Cheddar cheese
8 oz. sour cream
1 doz. corn tortillas
1 hot pepper, chopped (optional)
1 can cream of chicken soup
Preparation

Dip tortillas in hot shortening.
Place one tablespoon chicken, 1 tablespoon green chilies and 2 tablespoons cheese (grated) on each tortilla.
Roll up.
Place each one into a 9 x 13-inch pan.
Mix sour cream and cream of chicken soup; spread on top of tortillas.
Sprinkle remaining onion, cheese, green chilies and hot peppers on top.
Bake at 400\u00b0 for 15 minutes.
Do not overcook!
