    1 Tbsp. butter, softened
    1 1/2 c. self-rising flour
    1 Tbsp. sugar
    1/2 tsp. salt
3 Tbsp. butter, cut into bits and chilled
    1 egg
    1/2 c. milk
Preparation
    Preheat oven to 400\u00b0.
Coat a large baking sheet with softened butter. In a large, chilled mixing bowl, combine flour, salt and chilled butter.

Beat the egg with a whisk until frothy. Remove 1 tablespoon and set aside.
Add milk to the remaining egg and pour over the flour mixture.
Toss with a fork until dough can be gathered into a ball.
Roll dough to 1/4-inch thickness on a lightly floured surface.
Cut the dough into 2-inch rounds with a glass or cookie cutter.
Place 1 inch apart on the prepared baking sheet.
Brush the tops lightly with the reserved egg.
Bake 15 minutes or until light brown.
