Buttermilk Pralines - cooking recipe
Ingredients

3 c. sugar
1 c. low-fat buttermilk
1 tsp. soda
1/2 c. light corn syrup
2 c. chopped or halved pecans
3 Tbsp. margarine
1/2 tsp. vanilla
Preparation

Combine sugar, buttermilk, soda and corn syrup in large, heavy saucepan.
Bring to a boil (soft ball stage).
Just before removing from heat, add pecans, margarine and vanilla.
Beat by hand with wooden spoon until mixture loses its gloss and holds its shape. This takes several minutes.
Drop in mounds on wax paper.
These firm up as they cool down.
