Carrot Cake (With Pineapple) - cooking recipe

Ingredients
    3 c. flour
    2 c. sugar
    2 tsp. soda
    1 tsp. cinnamon
    2 tsp. vanilla
    1/2 tsp. salt
    2 c. grated carrots
    1 1/2 c. vegetable oil
    1 1/2 c. nuts
    1 small can crushed pineapple (juice and all)
    3 eggs
    2 Tbsp. orange rind or 1/2 coconut
Preparation
    Mix all dry ingredients.
    Add carrots, oil, pineapple and eggs.
    If desired, add orange rind or coconut.
    Bake in oiled and floured tube pan for 1 hour at 350\u00b0 or until set.
    Cool and serve or wrap for freezing.
    Best after about 3 weeks.
