Lemon Chicken(Sweetheart Social 1994) - cooking recipe
Ingredients

2 lemon rinds, grated
3 lemons, juiced
3 cloves garlic, minced
4 Tbsp. soy sauce
5 Tbsp. margarine
10 chicken thighs and breasts
flour
salt, pepper and paprika
Preparation

Make a marinade with first 4 ingredients and refrigerate several hours or overnight.
Melt margarine in a 13 x 9 x 2-inch pan.
Coat 10 chicken pieces (thighs and breasts) with flour and arrange in the pan.
Do not stir.
Slowly pour marinade evenly over chicken.
Sprinkle lightly with salt, pepper and paprika to taste (no salt used at the banquet).
Bake for 1 hour or until fairly brown at 350\u00b0.
Adjust time if you are doing boneless breasts to about 30 to 40 minutes.
