Watermelon Rind Pickles - cooking recipe

Ingredients
    5 lb. watermelon rind
    8 tsp. alum
    1 qt. cider vinegar
    1 Tbsp. whole cloves
    2 cinnamon sticks
    4 lb. (8 c.) sugar
Preparation
    Select firm watermelon rind.
    Cut off green skin and all pink from rind.
    Cut rind into triangular pieces. Weigh 5 pounds (about 3 1/2 quarts).
    Place in a large kettle.
    Cover with water; boil until rind is easily pierced with a fork.
    Add measured alum to rind.
    Remove from heat.
    Let stand overnight.
