Dottie'S Chicken File Gumbo - cooking recipe

Ingredients
    1 large baking hen (frozen ones seem more tender), cut up into serving pieces
    1 lb. regular smoked sausage
    1 lb. hot sausage
    1 c. ham, cut into small pieces
    1/4 c. oil (canola)
    1/2 c. all-purpose flour
    1/2 bell pepper, chopped
    1 large onion, chopped
    1/2 c. green onions (end included), chopped
    2 ribs celery, chopped
    3 cloves garlic, chopped
    2 Tbsp. parsley flakes
    1/2 tsp. ground thyme
    1/4 tsp. oregano
    1/4 tsp. basil
    approximately 2 doz. oysters with juice
    gumbo file (fresh if available)
    salt and pepper to taste
    boiling water
Preparation
    Place cut up chicken pieces in baking pan.
    Cover with foil and bake at 350\u00b0 about 1 hour.
    Slice both sausages and bake same time as chicken but for only about 30 minutes.
    Drain fat from chicken.
    Drain fat from sausages and discard.
