Summer Rice Salad - cooking recipe

Ingredients
    1 c. cooked, long grain rice
    1/4 c. green onions, chopped finely
    1/4 c. chopped red pepper
    1/2 c. chopped celery
    2 Tbsp. slivered almonds
    1/4 c. fresh mushrooms, chopped
    chopped zucchini to taste (optional)
    1/4 c. Italian dressing (more to taste)
    2 tsp. vinegar
    1 tsp. curry powder
Preparation
    Combine and hand blend the first 7 ingredients.
    Separately blend dressing, vinegar and curry powder.
    Mix all ingredients together and toss well.
    Cover and chill.
    Serve chilled.
