Frikadeller(Makes Approximately 32) - cooking recipe
Ingredients

1/2 lb. ground chicken
1/2 lb. ground veal
6 Tbsp. bread crumbs
2 large eggs
1 c. heavy cream
1 tsp. salt
1/2 tsp. pepper
4 c. chicken broth
2 Tbsp. flour
1 1/2 tsp. sugar
1 Tbsp. lemon juice
Preparation

Thoroughly mix chicken, veal, bread crumbs, unbeaten eggs, 2 tablespoons cream, salt and pepper.
Using 1 tablespoon, make into meatballs.
In a large saucepan, bring chicken broth to a boil. Add meatballs, a few at a time.
Cook about 15 minutes.
Remove with a slotted spoon.
When all meatballs are cooked, strain broth. Remove 1 1/2 cups broth for gravy.
Reserve any for another use. Gradually whisk broth with flour, keeping smooth, then whisk in cream, sugar and lemon juice.
Cook over moderate heat, stirring constantly, until thickened and boiling.
Reheat the meatballs in the sauce.
Sauce will be on the thin side and delicately flavored. Best when served over wide noodles.
