Caramel Icing - cooking recipe

Ingredients
    2 c. brown sugar
    1 c. granulated sugar
    1/8 tsp. baking soda
    3/4 c. cream
    1 egg white
Preparation
    Combine sugars, soda and cream.
    Cook stirring constantly, to 238\u00b0 or until a small amount forms a soft ball when dropped in cold water.
    Cool to lukewarm without stirring.
    Beat until creamy, add unbeaten egg white and beat until thick enough to spread.
    Will frost 3 (8-inch) layers.
